I know I’ve said this before. I’m not a big fan of desserts, so when I want something sweet, I only want a little of it. If I make the full-size version, the last part doesn’t get eaten and then I feel wasteful.
I’ve tried many different types of small desserts, with varied success, but this time, I think I’m onto something. There’s a kind of cake mix that divides perfectly into three 8-oz. jars, and the add-ins divide out pretty well, too. (I bought this mix at a snooty store for 5 bucks. Gah! The internets has it cheaper!!!)
I recently realized that lemon desserts are awesome, so lemon poppyseed cake was the first on the list. Whip together a jar of mix, an egg, a little chunk of butter, and about 3 tablespoons of water – ta da!
A tiny little cake that once glazed (lemon juice and powdered sugar, not the recipe on the lid), you will eat the first slice while it is still too hot and jealously guard the rest like a tiger guards his pumpkin.
Pesky Lloyd kept wanting some, and didn’t he see how little there was for sharing?? Honestly, he can be so thoughtless sometimes.
So, despite the fact that as I was inhaling the last piece I was loudly bemoaning, “Why did I make such a ridiculously small cake?!”, this was still a good idea because now, on the second cake, I am showing some restraint. It has taken three days to eat it.

It’s a 6-inch personal pizza pan from the restaurant supply store in Lincoln. I bought it months ago to make a tiny pie, but this cake was the first time I’ve ever used it. Again, I’m lazy.
