My parents have often suggested that I should try instant potatoes for a quick dinner option. They made it sound good, but I’m not really a potato person so I never looked into it. Well, with the Ham That Has Lasted Forever, I thought about giving it a try.
I cracked up when I saw the directions. The brand that I chose could qualify as backpacker food: No cooking. Just boil water, stir, eat.
Seriously. Boil two cups of water and pour in serving bowl. Too bad my crystal was dusty.
Dump potatoes unceremoniously into water.
Stir.
Take a badly-lit, out-of-focus shot of finished potatoes. You are done.
It was crazy. They were a little salty for me, but with my heated-in-cola ham, the flavors balanced out just right. They also needed a little more water, but other than that, it was a big two-thumbs-up for me.
Hmmmm…. I think an entire ‘just add water’ meal might be in my future…..

I think those dehydrated foods are pretty good.
But I still like the cook-and-serve pudding better than the mix-and-eat kind.

I can’t get on board with those mash potatoes, but I do like the Potato Au Gratin & Scalloped Potatoes that come in a box.
And although I never make it, I like the cook & serve pudding too….it’s much creamier. But are you supposed to eat the “skin”. I never do.

Thanks to all of you who were praying for me. God is good. Feeling somewhat better now. Glad to be home.
About the potatoes. Great when you are short on time. I don’t even mix them in a bowl. I boil the water and pour the potatoes right into the pan and add a little butter.
