Deborah came over for dinner Saturday night. Usually I am uncomfortable cooking for others (in a ‘Dear Lord, please don’t let anyone die from this meal’ kind of way), but Deborah doesn’t stress me out. I decided on enchiladas. They are easy enough to make, especially since I now just make them like lasagna in a round pan. Tortilla, meat mixture, cheese, repeat. Pour on the sauce and bake. None of that pesky rolling, and it tastes just the same.
Lloyd had to get a haircut in the morning so I was killing time at the Dollar Store. I usually have most of the stuff for enchiladas on hand, but I picked up sour cream and tortillas because I knew we were out of those.
Later when I thought about getting dinner ready I realized I had no chicken, cheese or onion in the house. Dang it

I went to buy those, came back home and discovered that we have no enchilada sauce.
Oh, for the love of Pete!
I ordered pizza.
…. but I called it ‘enchiladas’ at dinner.

Mmmmm…..pizza!! I’m not a big fan of enchiladas so I would have been happy about your ingredients mishap. (But I do hate when that happens…so frustrating)

That sounds like a typical home improvement project for me:
trip to the store for a screw, get home, find out I don’t have a screwdriver… three more trips later, I have the screw in the wrong place…
