The Potato Bake is tomorrow. It’s a big fundraiser Lenten dinner put on by the CDC, but honestly – I don’t know how much money we make. I’m just trusting that we come out in the black.
This year I am putting Murphy’s Law to good use. Parents are supposed to sign up to help and bring a salad or dessert. We are a little light on help and salads, so I cranked out some tonight. (Last time we desperately called out for salads we had a rush and turned out to have plenty. C’mon, Murphy!)
I googled easy salad canned vegetables because that’s what I had. Here’s what I cobbled together:
Faux Pea Salad They said mix up peas, chopped egg, bacon, cheese, onion and dressing (I used Miracle Whip & Ranch dressing). I did. Except for the cheese, which I just now realized, dang it. I’m not going back.
Corn Salad This is not a made-up thing. The recipe just said corn, chopped bell peppers and Italian dressing. I think there was something else, but I forget. I put in some red onion because I had it.
Cucumbers in Vinegar and stuff I’ve made this before, but this time I put in red onion because I had it. Also, I didn’t taste the Vinegar and stuff because it was after 7 and I can’t eat after 7. Also, I don’t ever measure for the stuff so it probably tastes weird. Also, I put in some red onion because I had it.
Coleslaw I didn’t have dressing, so I ‘made’ what was ‘suggested’ on the cabbage bag with some ‘substitutions’. It was some thick dressing. Hmmmmm…. we’ll see.
That is all. Off to wash the Mr. Potato Head shirt I wore today so I can wear it tomorrow. With red onion because I had it.
