The cook we had for the summer was temporary. (Her husband was going to the seminary.) Our director has been filling in as cook until we get a permanent replacement. (She is an amazing lady.) She had some appointments one afternoon and since I was waiting for a family to stop by for a tour, I thought I’d help out by filling the condiment bottles.
This is the kind of challenge I love. There has to be ‘the’ most efficient way to cleanly fill small condiment bottles with whatever goes in them. I already know what that is: A giant syringe. Seriously. The opening would be just smaller than the bottle’s. Put in in the refill container, suck it up, then inject it in the bottle. No muss, no fuss.
We didn’t have that, though. I couldn’t prototype one in the allotted time. I tried two methods. First, an oiled funnel. This goes alright, but there is too much standing time waiting for gravity to do it’s work.
The second was much more efficient, but much more wasteful: a gallon ziplock.

What did I learn from this? Overfill the bag. It doesn’t matter if you put too much in – you can just squirt the extra back in the refill container. You have to be quick with the lifting of the bag corner/tip before the bottle gets too full. I did make a small mess with one bottle and overfilled another.
Lesson learned? I would love working in food service. Seriously.
