
As is Lloyd’s custom on a 3-day weekend, he does not feel well. I’d go into a big rant about it, but when I tried to remember when the last 3-day weekend was that this happened, it was Easter, and that was right before he went to the hospital. (Yikes!) So, I’m shutting up about that, except to mention that he doesn’t sleep well with all the nose-blowing and coughing, so he slept until noon yesterday and it looks like today will be much the same.
Yesterday I was productive while he slept. I’m trying to learn how to make good pancakes from scratch, and so I tried some with whole wheat flour. They were ok.
Then I went out to mow the gigantic grass in our yard that had all gone to seed. I made it almost once around the perimeter when:
Dang. I fixed it, but we need a new mower.
Lloyd was up and felt well enough to go looking at computers (and now mowers), so we drove into Omaha. On the way we stopped to admire a fairy circle. Other people were stopping, too. We didn’t know that it had been mentioned in the newspaper.

I needed something to eat in Omaha, so I ordered a cheeseburger from Burger King. It tasted a little funny, but I just kept eating. Finally I stopped to look at it. “What the heck am I eating?” Barbeque sauce and onion rings?? On the burger?? Oh.

So all in all, a pretty good day. Today I’ve got lots of gumption to get lots of things things done around the house. Have a great Labor Day weekend!
You should be careful… I think standing inside a fairy ring can make you pregnant!

I LOVE homemade pancakes … and waffles … What are those dark lumps in your pancakes though? I’m hoping blueberries …
And I think I foresee a pre-school story building about the poor little lawn mower wheel & it’s adventures as it rolls around Seward.

The lumps are actually dried cranberries rehydrated in water and peach schnapps. I had no blueberries, and I love to substitute stuff

We have a pancake recipe that we love with half whole wheat flour:1 egg, 1/2 cup all purpose, 1/2 cup whole wheat, 3/4 cup milk, 1 T brown sugar, 2 T vegetable oil, 3 t baking powder, 1/4 t salt. I just glom it all together in the stand mixer, but the recipe says to make the eggs “light and fluffy” first. (We don’t buy Bisquick any more, and we even turn up our nose at diner pancakes after discovering this recipe!)
That is almost my recipe! I’m trying to memorize it by thinking ‘ones’.
One cup of flour (I make 1/4 of that whole wheat)
One BIG t. b.p. (It’s really supposed to be 2, so I heap it.)
One smidge of salt (mix in bowl)
Then in my pyrex measuring cup
One scant cup milk
One egg
One splash of vanilla
Mix. Add one melted T. of butter.
Get one cat hair in it.
Done!
I like that yours has sugar in it -- I’ll have to try that!
And brown sugar… I think that may be the key ingredient, in fact. Molasses might also do the trick, but then you would probably have to adjust the milk.
