I’m not proud, but I ain’t ashamed.

December 5, 2011 by Lauren 4 Comments

A friend of mine, who can reveal her identity if she so chooses, has a mother-in-law who apparently used to make ‘casserole’ for her family at the end of the week. That means that she would take all the leftovers in the fridge, throw them together and heat them up, and that’s it.

Hmmmmmmm……. sounds crazy, but it just might work!

When my friends from Colorado were here we went to eat at the only nice restaurant in town, Cafe on the Square, and they all had leftovers at the end that were in my fridge. (Macaroni and cheese, half of a french dip, half of a rueben.) Tonight when I came home from work, I looked at the boxes, and told Lloyd, “Let’s just heat them up together.”

So, macaroni and cheese in the pan with a little milk, all the meat pulled out of the sandwiches and diced up, add some tomatoes and viola’! “Casserole!”

Lloyd will eat anything, and in fact declared, “This isn’t bad.”

See? “This isn’t bad.” You don’t get a higher endorsement for my cooking.

(No photo of finished product. I forgot.)

That’s a pretty traditional combination. What wouldn’t you have mixed with those ingredients? Waffles? Banana pudding? Would Lloyd still have eaten it? You should see how far you can push him.

Hey! That’s MY Mother-in-Law you’re writing about! Only I’m quite sure the combination of tuna burgers, spaghetti, chilie and green beans did not make something that could be called, “This isn’t bad”.

    Quite the opposite, in fact.

Oh my goodness! As I was reading the post, my only thought was that sounds like something my Mother-in-law would do. Sure enough – it is her!

Well it certainly sounds like a good idea. Hmmm….what leftovers do I currently have in my frig. Cranberry sauce from Thanksgiving…2 BBQ wings, slimey bagged lettuce, a broiled chicken tender. Yea, maybe it’s not a great idea afterall.
