The first Lenten meal was a taco night, hosted by youth raising funds for a trip, and they had too much meat. Sam and Rachel offered it for our dinner, and I gladly accepted. It could be turned into chili for our Potato Bake.
I vastly underestimated how much meat there was. Combined with four giant cans of tomato sauce, it made three big pots of chili…. and there is still meat left over.
I started them on the stovetop, but then moved them to the ovens for a couple of hours to finish. That way they wouldn’t scorch on the bottoms. I always hear Deborah’s voice when I think of burnt chili. “It tasted like cigarettes…”
The majority of the work was packaging it so it would cool down quickly and can be reheated in crock pots. I portioned it into zip-lock bags and it took way longer than I thought it would.
At least it’s mostly done!
