A while back, Beth said that she got some new sheet pans and they were so nice to use. Previously, she had restaurant sheet pans like mine, but after many years, they do take a beating. I was jealous, so I ordered some new ones. They’re beautiful, and it’s time to break them in.
Clean Lauren made cookie dough earlier this week and froze it. Really! Go, Clean Lauren! I made it extra-easy for Current Lauren to bake them up, since it was just a slab of dough, cut/scored and wrapped in parchment paper. Tonight I unwrapped it, broke it into pieces and baked it on the same parchment, thereby protecting my new, beautiful pan.
(I’ll still keep my old pans, though. Gotta bake my bread on stuff that can take a beating.)
