Well, we had a very nice Christmas. Philip wasn’t feeling too well so he stayed home from Christmas services. (This high altitude and dry air can mess with your system.) The rest of us went to church and it was great. The singing was wonderful, and we got to help Mom and Dad set up and take down communion. It was fascinating seeing how another church did it.
The rest of the day was delightfully laid back. One of Phil’s friends stopped by and we had a good visit. We FaceTimed with my other brother and sister, and ate yummy food all day long.
Phil also brought along a cheese kit and we made mozzarella cheese for real! It had directions that kept cautioning you to do this or not do that, so I actually read through them. It was cool, and the final result was more than edible – it’s downright tasty.

There were other steps, but my photos won’t load. After you separate the curds from the whey, you heat it a little and then act like you’re pulling taffy. It gets all stringy and you can either make string cheese or form it into a ball and let it cool.
Isn’t cheese making on my life list? I’d better go cross that off.

I still don’t get how someone originally figured out that rennet turns milk into cheese. What person in the past randomly mixed some stomach juices from an animal with milk to see what would happen?
