I have a new addition to Pop-n-Dog and my Donut Shop. It’s going to be called Just a Smidge.
See that bottle of light corn syrup in the banner photo? I need one tablespoon of it. One tablespoon. Afterwards, that bottle is going to live in my cupboard for the next ten years until I finally work up the nerve to toss it. Then Time will go by and I will have another need for one tablespoon of corn syrup.
That tiny can of cloves? I need a little sprinkle for my Tang Tea. That can is going to last much longer than its ‘use by’ date.
When we make fondue for New Year’s Eve, one of the ingredients is kirsch – cherry brandy. One tablespoon. One tablespoon once a year.
See, if I had ‘Just a Smidge’, I could be the place that has all the weird ingredients that you only use once in a blue moon, and I could just sell you what you need and store the containers for you in my giant store. Of course, the prices would be astronomical, but you’ll thank me when you need five drops of pineapple extract for your yellowtail dish.
By the way, that flour? I accidentally bought self-rising! Arrrrgh!! Another trip to the store to exchange it!!! Reading is hard.

I was going to highlight the words “yellowtail dish” and google them, because I had no idea what you were talking about, and I noticed my cursor turning into a hand when I hovered over the period at the end of your post.

The same thing is true of anise seed. $4.75 for a bottle. I use maybe a tablespoon for springerle at Christmas. So I have enough for twenty years. But the next year it is stale so I throw it away, ..or use it and the cookies don’t taste right.
Also, I have a good chicken noodle soup that calls for vermouth. Do I have vermouth? No. So I used cognac that is 25 years old. The soup was good. Maybe I will keep that bottle for another year.
